Ability to use mailmerge fields when creating an accompanying email to clients for Invoices etc

I'd like to be able to customise the email I send to clients and choose fields like the business name, invoice number, amount, contact when composing an email and attaching an invoice, statement, credit note etc.
The same appies to the message header.
There is no ability to allow this customisation which is incredibly odd as the fields are available.
