It would be helpful to be able to change from 'Today's Date' to a 'System Date' to avoid having to reset the date when multiple transactions are posted with the same date.

This could work exactly as in Sage 50 Accounts software, by simply allowing the ability to switch between dates, thus enabling any date before 'Todays Date' to be set on the system to allow multiple transactions for an earlier date to be input without having to key into the 'diary' and set the correct date for each transaction.
